Pinot Noir is the most responsive variety to changing vintage conditions and the way it\'s grown and made. Our Pinot is all grown on a trellis known as Vertical Shoot Positioning (VSP) which aims to maximise the sun exposure of the bunches to maximise flavour development. The Barmah vineyard is warmer and drier than the elevated slopes producing a wine with a fully developed flavour spectrum.
Two clones are grown (MV6 and G5V15) which are blended to increase complexity.
This is a white wine made from a red variety and this is achieved by pumping clear juice out of the red fermenters as soon as possible, settling the juice and fermenting it in cooled stainless steel tanks as done for white wines. The wine is pink at this stage but the colour is absorbed by yeast and tartrates which are filtered out prior to bottling.
